Garlic Parmesan Chicken Fingers
Ingredients:
4 boneless, skinless chicken breasts or thighs
1/2 cup plain bread crumbs
1/2 cup flour
2 eggs
1 tsp garlic powder
1/2 tsp onion salt
1/4 tsp pepper
1/2 cup Parmesan cheese
1/4 - 1/2 cup butter, melted
Instructions:
1. Cut chicken into strips.
2. Dredge chicken strips in flour, dip in egg, and then coat with bread crumbs.
3. Place chicken on baking sheet and bake at 375 degrees for 30 minutes or until cooked through and golden brown.
4. In a small bowl, mix together garlic powder, onion salt, pepper, Parmesan cheese, and melted butter.
5. Mix Parmesan cheese mixture with cooked chicken from the oven.
6. Enjoy!

Creamy Chicken Pasta
Ingredients:
8 chicken breasts or thighs
1 pack of Italian salad dressing
8 tbsp. butter
1 package cream cheese
3 cans cream of mushroom soup
2-4 cups milk
Instructions:
1. Cook together chicken, butter, and Italian salad dressing for 1 hour at 350 degrees.
2. Chop up cooked chicken.
3. Mix cream cheese, cream of mushroom soup, and milk together.
4. Add the mixture to the cooked chicken and mix well.
5. Cook for another 30 minutes in the oven.
6. Add creamy sauce and chicken to cooked noodles.
7. Enjoy!

Okinawa Taco Rice
This is one of our favorite dish to make because it is so easy to make, taste super good, and healthy. We lived in Okinawa for three years, and this dish brings back so many good memories of our time there. Hope you guys like it.
Ingredients:
1 tbsp butter or vegetable oil
3 cloves minced garlic
1/2 tsp ginger (optional)
1 medium onion, chopped
1 lbs beef
1/2 tsp salt
1/4 tsp pepper
1/8 tsp cumin
1/8 tsp chili powder
2-3 tbsp soy sauce
pinch of basil (optional)
pinch of marjoram (optional)
pinch of oregano (optional)
4 cups steamed rice
2 cups lettuce, shredded
2 cups tomatoes, chopped
1 cup Mozzarella cheese, shredded
Salsa
Sour cream
Instructions:
1. Melt butter or heat vegetable oil in pan over medium heat.
2. Add garlic, ground ginger, and chopped onion.
3. Add ground beef, salt, pepper, cumin, chili powder, soy sauce, basil, marjoram, and oregano.
4. Stir and cook until beef is done.
5. Start building the dish with rice, beef, lettuce, tomatoes, cheese, salsa, and sour cream.
6. Enjoy!

Easy Cheesecake
Ingredients:
2 packages cream cheese
1 egg
1/2 cup sour cream
1/2 cup sugar
1 tsp vanilla
1/2 tsp cinnamon
Directions:
1. Bake at 350 degrees for 45 minutes until golden brown.
2. Let it cool and refrigerate.
3. Enjoy!

Zuppa Toscana
Ingredients:
1 lb. chopped Italian sausages (mild or spicy)
4 cups water
3 to 4 tsp chicken bouillon
1 large onion, chopped
3 medium potatoes, chopped
1 to 1 1/2 cups heavy whipping cream
3 cups kale
Salt and pepper to taste
Can also substitute water and chicken bouillon to 4 cups of chicken broth.
Instructions:
1. Place Italian sausages in a large pot.
2. Add water and chicken bouillon.
3. Let it cook until meat is browned.
4. Add chopped onion.
5. Let boil 5 to 7 minutes.
6. Add chopped potatoes and cook until potatoes are tender.
8. Add heavy whipping cream and kale.
9. Let it boil and add salt and pepper to taste.
10. Enjoy!
